Cheesecake Stuffed Strawberries

Who doesn’t love strawberries?!? I like to bring home a fresh basket of berries from the local farmers market for snacking, deserting or a delicious fruit salad. The best time for strawberries is June, July and August are when they are at their peak.
I’ve got a great recipe for a bite sized treat for your picnics or party. These are always the talk of the party!
1 pound large strawberries
8oz. block cream cheese – soft
3 – 5 tablespoons powdered sugar (sweeten to taste)
1 teaspoon vanilla extract
Rinse strawberries and cut around the top of the strawberry. Next, remove the top and clean out inside with a knife. Mix cream cheese, powdered sugar and vanilla. Add cream cheese mix to piping bag and fill strawberries.
Optional: dip the top in graham cracker crumbs, or drizzle strawberries with chocolate or top off with a blueberry or raspberry!
